Pumpkin Streusel Squares


My New Recipe Box Find ~ Pumpkin Streusel Squares


I was looking through my recipe box yesterday and found a recipe that I have never tried before. I don't really know where I got it from but thought the ingredients sounded good so decided to make it. I'm a big fan of pumpkin desserts, especially in the fall and holiday time. It's easy and doesn't take long to make. Hope you enjoy! The recipe is below if you would like to try it.

PUMPKIN STREUSEL SQUARES

1-3/4 cups unsifted flower
1/3 cup packed brown sugar
1/3 cup granulated sugar
1 cup cold margarine or butter, cut into small pieces
15 ounce can of pumpkin
1 cup chopped walnuts
1 can sweetened condensed milk
2 eggs
1 tsp. ground cinnamon
1-1/2 tsp. ground allspice
1/2 tsp. salt, optional

Preheat oven to 350 degrees. In medium bowl, combine flour and sugars. Cut in margarine until crumbly. Stir in nuts. Reserving 1 cup crumb mixture, press remainder firmly on bottom and halfway up sides of 12x7 inch baking dish. In large mixer bowl, combine remaining ingredients. Mix well. Pour into prepared dish. Top with reserved crumb mixture. Bake 55 minutes or until golden. Cool. Serve with ice cream or whipped cream. Refrigerate leftovers.

Magic Cookie Bars


Here's an easy recipe for a delicious dessert you could make for your Labor Day party or gathering. You might already have some of the ingredients on hand in your pantry. It's a delicious treat and satisfies my sweet tooth too!

1-1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine melted
1 (14 ounce) can sweetened condensed milk
2 cups (12 ounces) semi sweet chocolate chips
1-1/3 cup flaked coconut
1 cup chopped walnuts

1.  Preheat oven to 350 degrees (325 degrees for glass dish).  In small bowl, combine graham cracker crumbs and butter; mix well.  Press crumb mixture firmly on bottom of 13x9-inch baking pan.
2.  Layer evenly with remaining ingredients and press down firmly with fork.  Pour sweetened condensed milk evenly over everything.
3.  Bake 25 minutes or until lightly browned.  Cool.  Chill if desired.  Cut into bars.  Store covered at room temperature.

One Of My Favorite Spring Time Desserts ~Rhubarb Crunch (Easy and Delicious)


Spring time means rhubarb has begun to grow. This fruit is so good with it's tarty flavor!  You don't eat it alone but it is great in pies or desserts....combined with sugar and brown sugar. Here's a recipe that I found in an old church cookbook that I have. It's so easy and tastes very good!

Here is the recipe for you all. Hope you enjoy it like I do!

1 c. sugar
3 T. flour
1 c. oatmeal
1/2 c. butter
4 c. rhubarb, cut up
1 c. brown sugar
1-1/2 c. flour
1/2 c. shortening


Combine rhubarb, sugar and 3 tbsp.flour.  Place in greased oblong cake pan.  Combine brown sugar, oats and 1-1/2 cups flour.  Cut in butter and shortening; sprinkle over rhubarb.  Bake at 375 degrees for 40 minutes or until golden brown. This is good with a scoop of vanilla ice cream or some whipped cream too!

Beef Vegetable Soup and Magic Cookie Bars For Dessert


 Today I thought I'd make a big batch of homemade vegetable soup and a dessert...Magic Cookie Bars. Some people call them seven layer bars but the recipe I have calls them Magic Cookie Bars so that's what I'm calling them.

The soup turned out good with lots of veggies in it. I use fresh carrots and potatoes, but used frozen corn, peas, and lima beans for the rest of the vegetables. Hmm, I just noticed that I forgot the green beans when I made the soup. Oh well, nobody missed them or said anything. I first start out with chopped onions, garlic and celery and cook the beef with these, till everything gets tender. Soup is something everyone does a little different but here is my recipe for a guideline. Click on the name below for the recipe.



The Magic Cookie Bars must have been alright since one of my sons has eaten about 3 or 4 of them already. I'm waiting till later tonight to indulge in one before I go to bed. I'm one to eat more later at night, which is a habit of mine. You want to know a secret? I even eat snacks in bed, ha, ha. Yea, it's what I do. Sometimes I even get crumbs in the bed. Anyways, here is the recipe for them if you have never heard of them before . They have a graham cracker crust, chocolate chips, chopped walnuts, coconut and sweetened condensed milk. Striped Delight Dessert Is My Favorite Chocolate Dessert! What's Your Favorite Dessert?

35 Oreo cookies
6 Tbsp. butter, melted
1 pkg. (8 oz.) cream cheese
1/4 cup sugar
 2 Tbsp. cold milk
1 tub (12 oz.) Cool Whip, thawed, divided
3 1/4 cups cold milk
2 pkg. (4-serving size each) chocolate instant pudding & pie filling
Place cookies in food processor and process to form fine crumbs.  Transfer to medium bowl.  Add butter; mix well.  Press firmly onto bottom of 13x9-inch dish.  Refrigerate 10 min.  Meanwhile, beat cream cheese, sugar and 2 Tbsp. milk in separate bowl with wire whisk until well blended (I use an electric mixer).  Stir in 1 1/4 cups of the whipped topping.  Spread over crust.
Pour 3 1/4 cups milk into large bowl.  Add dry pudding mixes.  Beat with wire whisk 2 min.  or until well blended.  Spoon evenly over cream cheese layer.  Let stand 5 min. or until thickened.  Spread remaining whipped topping over pudding layer.
Refrigerate at least 4 hours.  Store leftover dessert in refrigerator.

 2 Tbsp. cold milk
1 tub (12 oz.) Cool Whip, thawed, divided
3 1/4 cups cold milk
2 pkg. (4-serving size each) chocolate instant pudding & pie filling
