One Of My Favorite Spring Time Desserts ~Rhubarb Crunch (Easy and Delicious)


Spring time means rhubarb has begun to grow. This fruit is so good with it's tarty flavor!  You don't eat it alone but it is great in pies or desserts....combined with sugar and brown sugar. Here's a recipe that I found in an old church cookbook that I have. It's so easy and tastes very good!

Here is the recipe for you all. Hope you enjoy it like I do!

1 c. sugar
3 T. flour
1 c. oatmeal
1/2 c. butter
4 c. rhubarb, cut up
1 c. brown sugar
1-1/2 c. flour
1/2 c. shortening


Combine rhubarb, sugar and 3 tbsp.flour.  Place in greased oblong cake pan.  Combine brown sugar, oats and 1-1/2 cups flour.  Cut in butter and shortening; sprinkle over rhubarb.  Bake at 375 degrees for 40 minutes or until golden brown. This is good with a scoop of vanilla ice cream or some whipped cream too!

Delicious Rhubarb Pie


Delicious Rhubarb Pie


Make pie crust and make enough dough for lattice strips on top if you want. I like it better this way,

Ingredients for filling:

4 cups fresh rhubarb (cut into small pieces)
1 egg (beaten)
1-1/4 cup sugar
3 tbsp. flour
2 tbsp. milk
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 tbsp. butter (I just put dabs on top of pie before putting strips on)

Combine all ingredients except butter in large bowl and mix thoroughly. Pour into prepared pie crust and add dabs of butter around fruit mixture. Place lattice strips on pie. Bake for approximately 45 degrees at 375 degrees or until pie crust starts to get light golden brown. You have to cool thoroughly or pie will be runny. This is great with vanilla ice cream!
