Delicious Rhubarb Pie
It is the time of year where rhubarb is growing and I love rhubarb pie! This recipe is from my mother. She and my dad cooked together and made lots of pies, including rhubarb when it was in season. I don't like custard as some other recipes called rhubarb custard pie. This is the best I have ever had!
Make pie crust and make enough dough for lattice strips on top if you want. I like it better this way,
Ingredients for filling:
4 cups fresh rhubarb (cut into small pieces)
1 egg (beaten)
1-1/4 cup sugar
3 tbsp. flour
2 tbsp. milk
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 tbsp. butter (I just put dabs on top of pie before putting strips on)
Combine all ingredients except butter in large bowl and mix thoroughly.
Pour into prepared pie crust and add dabs of butter around fruit
mixture. Place lattice strips on pie. Bake for approximately 45 degrees
at 375 degrees or until pie crust starts to get light golden brown. You
have to cool thoroughly or pie will be runny. This is great with vanilla
ice cream!
