Awesome Chocolate Chip Oatmeal Bars

I have a lot of oatmeal in my pantry so decided to look up a recipe for oatmeal bars on Pinterest recently. Bars are so much easier to make than cookies when you don't have the time or feel like it and this is a great easy recipe.

Anyways, here is the recipe and I just love them! They are great with a big glass of milk or a cup of hot tea, whatever your heart desires.


Ingredients:

2 Cups Flour
1 Tsp. Baking Soda
1 Tsp. Baking Powder
1 Tsp. Salt
1/2 Tsp. Cinnamon
2 and 1/2 Cups Old Fashioned Oats
1 and 1/2 Cups Light Brown Sugar
1 and 1/4 Cup Real Butter, Melted
2 Eggs
1 Tbsp. Vanilla
2 Cups Semi-Sweet Chips


Directions:

Preheat oven to 350 degrees.
In a large bowl mix the flour, baking soda, baking powder, salt and cinnamon. Combine well. 
Add the Old Fashioned Oats and light brown sugar and mix well.
Melt the butter and pour into the mixture, thoroughly combining everything.
Beat the eggs in a separate small bowl, then add to large bowl of mixture, along with the vanilla and mix everything once again. It will be rather crumbly.
Add chocolate chips and mix together.


In a 9 by 13 inch baking pan, grease or spray bottom well. Then place your oatmeal mixture evenly and press down firmly. Bake for approximately 20 minutes until a butter knife or toothpick comes out clean.

After cooling cut into bars and that is it. So easy which I really like! They are rich and delicious!

Credit for this recipe goes to Jamie Cooks It Up!  I changed the amount of chocolate chips to 2 cups and used light brown sugar since it wasn't specified if it was light or dark. I also beat the eggs in a separate small bowl before adding to the mixture.

  1. Those oatmeal bars look soft, chewy, and delicious! I like that they make a cake pan size. I have a lot of recipes that are for the smaller square pan and we go through that quick!
