Buffalo Chicken Dip ~ Recipe

Ingredients:
2 cups diced or shredded cooked chicken (I used two larger cans of chicken)
1/3 cup hot pepper sauce (more or less depending how hot you like it)
1 cup mayonnaise
1 cup shredded cheddar cheese
2 tbsp. finely chopped onions (optional)
1 tsp. lemon juice
1/4 cup crumbed blue cheese

Preheat oven to 375 degrees.  Mix chicken with hot pepper sauce in medium bowl.  Stir in remaining ingredients, except blue cheese.  Put into medium casserole dish.  Then sprinkle with blue cheese.  Bake about 20 minutes or until bubbling.  Serve with your favorite vegetables or nacho chips.  We didn't have blue cheese in this picture but sprinkled parmesan cheese on top.  It was also good like this.

This dip pairs well with any of your favorite crackers or fresh veggies!

I saw this recipe on the Hellmann's website.  They had green onions for the onions, but the regular onions (chopped finely) worked just as well.
