Chocolate Pecan Pie Bars Recipe
I printed out the recipe for these bars way back in 2001 and had it filed in my old wooden recipe box all these years. It called for 1 and 3/4 cups of semi-sweet chocolate chunks but I changed it to 1 cup of chocolate chips. I've never made them before but yesterday was the day! Since I had pecans and chocolate chips on hand, I thought it was finally time to make them - better late than never! Also the cold and dreary weather makes me want to bake. If you like pecans and chocolate you'll probably like these!
Ingredients
Crust:
1-1/2 cups all purpose flour
1/2 cup (1 stick) butter or margarine, softened
1/2 cup packed brown sugar
Filling:
3 large eggs
3/4 cup dark corn syrup
3/4 cup sugar
2 tbsp. butter or margarine
1 tsp.vanilla extract
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees. Grease 13x9 inch baking pan.
For Crust:
Beat flour, butter and brown sugar in small mixer bowl until crumbly. Press into prepared baking pan. Bake for 12 to 15 minutes or until lightly browned.
For Filling:
Beat eggs, corn syrup, sugar, butter and vanilla extract in medium bowl with wire whisk. Stir in chocolate chips and pecans. Pour evenly over baked crust.
Bake for 25 to 30 minutes or until set. Cool in pan on wire rack. Cut into bars.
My husband and son loved these bars quite a lot! They are quick to prepare and take so much less time than baking cookies.

My husband loves pecan pie, so I think he would really like this recipe. It seems faster and easier to make too.
