Potato Pancakes
Ingredients:
Approximately 10 large potatoes
3 medium onions
3 eggs
3 tbsp. flour
salt and pepper
Oil or Vegetable Shortening
Peel potatoes and onions. Cut in chunks and put small amounts of potatoes and onions in a blender (this is what we use) and chop/blend up. Add 1 egg and 1 tbsp. of flour while blending. Mix in salt and pepper, depending how much you want or to taste,
Keep adding more potatoes and onion and chop till you get just about a blender full.
Put a 2 to 3 tbsp. oil or vegetable shortening in electric frying pan. Put on medium heat and use large spoon to take potato mixture out of blender and drop in frying pan. Flatten them slightly with spatula and fry till golden brown on each side.
Repeats these steps after you get the first batch of potato pancakes in the frying pan. This makes approximately 36 pancakes. You could cut the recipe in half to make less. We like them a lot and my boys are big eaters! They are also good leftover. Actually my son made these since he like them a lot and he likes them with sour cream on them! You have them with butter or even applesauce with them.
