Easy Oven Fried Chicken


2 -1/2 to 3 pound chicken, cut up
1/4 cup shortening
1/4 cup butter or margarine
1/2 cup flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. pepper

Heat oven to 425 degrees. Wash chicken and pat dry. In oven, melt shortening and butter in baking pan, 13x9x2 inches. (I lined pan with foil for less cleaning) Mix flour, salt, paprika and pepper. Coat chicken pieces thoroughly with flour mixture.

Place chicken skin side down in melted shortening.
Bake uncovered 30 minutes. Turn chicken; cook 30 minutes longer or until thickest pieces are fork-tender.

I found this recipe in an old Betty Crocker cookbook that I have.
